Blackberry Peach Popsicles - Made from Real Fruit!

It's not even technically summer yet, but the heat is ON in Alabama! My husband and I took a trip to the farmers market, and I came back with some fresh local peaches and blackberries. I had a little more than I could eat by myself, so I decided I would make some fruit popsicles. I used to make real fruit popsicles all the time when I was in high school, but this recipe is all my own! If you don't like blackberries, you can replace these with a berry you do like such as strawberries, raspberries, or blueberries. The awesome thing about fruit popsicles is that you can mix it up anyway you want with the fruits that you like!





For this recipe you need a popsicle mold. They are pretty cheap at most grocery stores, and they even have tons of cute shapes! I found this mold at Bargain Hunt, so I don't know where it is originally from. I like it better than other ones I've used, because the molds are individual instead of one large piece. This way, you are less likely to pull the stick out of the popsicle.





Because molds can be so different, I'm not going to give measurements, so just use your best judgement! Grab all your ingredients and wash your fruit to get started.


First, place a few blackberries in your mold.





Next, chop up your peaches and place them in your blender. I wanted my mixture to be a little more liquified, so I added in a half cup mixture of sugar water. Simply add equal parts sugar and water to a pot and boil until all the sugar is dissolved. Just be sure to let it cool before you add it to your blender, especially if it is glass.





Once everything is in the blender, I chose the "food processor" setting on my blender so it was as much of a liquid as possible.





After blending, add your peach mixture to your mold. If it gets stuck on your berries, use a spoon to move the berries around so that the peach mixture fills the mold about 3/4th of the way full. Then use your remaining berries to poke into the mold, which should displace the liquid so that the mold is completely full. Then just place in your sticks, clean up your mess that I know you made (I sure did!), and place them in the freezer!



Real fruit popsicles are awesome because you know EXACTLY what is in them. They are crazy fun to experiment with, too! I have made peach and honey, strawberry and blackberry, cantaloupe and apple, watermelon and lime, and blueberry lemonade before as well. I haven't found one I don't like yet!



Recipe


Blackberries

Peaches

Sugar

Water

A blender

Popsicle molds


Wash your fruit

Place 2 blackberries in the molds, whole

Boil one part sugar one part water (I used half a cup each) until sugar is fully dissolved

Cut up peaches

Add sugar water and peaches to blender and puree - make mixture as much of a liquid as possible

Pour into molds and then place extra blackberries in -as many as you want!

Place stick in Molds

Place in freezer

Allow several hours for mixture to freeze.


Having trouble removing your popsicle? Run your mold under warm (not hot!) water. This should allow the popsicle to melt slightly so that you can pull it out of the mold.

Somebody gave me popsicle molds recently and now I really want to try this! We even have blackberry bushes.
